Eggs are a Good Source of Protein

There are so many ways to cook eggs and they can be an economical source of protein. We use eggs at different times of the year during the changing seasons. Dying them during the holiday is a fun activity for all ages. Using leftover hard-boiled eggs for egg salad sandwiches on whole wheat bread is a great way to use leftovers and prevent food waste. https://blogs.ifas.ufl.edu/browardco/2022/03/28/prevent-food-waste/ Deviled eggs are commonly served at summer picnics.  Scrambled eggs, bacon and fresh fruit are often a staple for weekend breakfast meals. Egg souffles are tasty for brunch shared with friends. In addition to eating eggs for breakfast, some eat eggs for dinner.

Eggs and Nutrition

MyPlate is the icon we use to remind us to eat healthy. One of the 5 MyPlate food groups is the protein group. Eggs are found within the protein group. Some people think the purple MyPlate group is the meat group, but it is called the “protein group”. The category protein includes eggs, shellfish, fish, beans, peas, nuts, seeds, and soy products in addition to meat products. It is recommended that we eat a variety of foods from each of the MyPlate food groups every day in moderation. Foods containing protein will help you get nutrients your body needs. Proteins are known as building blocks in the body. They are essential for growth and development, repairing and building cells and tissue such as muscle. https://www.health.harvard.edu/nutrition/high-protein-foods-the-best-protein-sources-to-include-in-a-healthy-diet  We are encouraged to eat lean or low-fat meat and poultry choices. For example: Select lean ground beef and/or skinless chicken breasts.

However you choose to eat eggs, they contain approximately 72 calories per egg, 6.3 grams of protein which is a high biological value protein source. Food Safety and Handling Eggs

Remember the four basic food safety principles when handling eggs: Clean, Separate, Cook and Chill. Always wash your hands with soap and water for at least 20 seconds before and after handling eggs.  https://www.foodsafety.gov/keep-food-safe/4-steps-to-food-safety

Eggs are a nutritious and economical food, but fresh eggs must be handled carefully. Even eggs with clean, uncracked shells may occasionally contain salmonella.  To prevent food poisoning, keep eggs refrigerated, cook eggs until yolks are firm, and cook foods containing eggs thoroughly.
