Sea Grant Seafood Cooking Series Kicks Off!

This Wednesday evening, UF/IFAS Extension Florida Sea Grant launches the “Seafood at Your Fingertips: LIVE” cooking series. Libby Carnahan, Pinellas County Agent, is bringing you some fresh ideas for an old favorite- the can of Tuna! Libby will prepare Pesto Tuna Pasta and an Entrée Salad with canned tuna as the main protein. If you would like to follow along and make one or both of the dishes for your dinner, the shopping list is below. Libby thinks you may be surprised to find many of the ingredients already in your refrigerator or your pantry. In fact, the Pesto Tuna Pasta is made entirely with non-perishable items and is a perfect recipe to have it your back pocket during hurricane season. Both recipes are inexpensive to prepare, which can help in these tough economic times! Of course, you can scale the salad up or down depending on your tastes!

The cooking demonstration will take place at 6 pm EST on Wednesday, May 13th and will be followed by new cooking demos each Wednesday now through July on the Florida Sea Grant Facebook page! If you cannot catch us live, all videos will be archived in Facebook for future viewing.

Shopping Lists
Pesto Tuna Pasta – serves 2
Can of Tuna, 5 oz.
4 ounces Spaghetti noodles
2 Tb Pesto
Capers, optional
Parmesan, optional

Entrée Rainbow Salad with Tuna – serves 2
Can of Tuna
Greens, your choice – spinach, kale, butter lettuce, arugula, options are endless!
1 hardboiled egg
Beets, can or Jar
Artichoke hearts, can (quartered )
Carrots, shredded
Mushrooms, fresh
Garbanzo beans, can
Cucumber
Tomato
Other vegetables of your choosing
Cheese of your choice (we choose feta crumbles)
Dressing of your choice (homemade red wine and vinegar)
