Whether the honeyed softness of a ripe sapodilla, or the evanescent sour notes of a starfruit, tropical fruits offer a range of flavors, textures and experiences that enliven the taste buds and expand our experiences. This collection explores the flavor profiles, nutrient values, medicinal uses, and cultures that have cultivated these wonderful fruits through the ages. Article 2- Miracle Fruit (Synsepalum Dulcificum)
When you first encounter the tiny red berry of the little shrub from the Spotaceae family, you think to yourself, “so what is all this about”. The ellipsoid shaped fruit appears to be so insignificant, even perhaps a bit dangerous with its deep pinkish-red color. However, consumption of the slightly sweet pulp performs a magical act on the taster’s perception. Food items such as lemons that are normally sour are transformed into saccharin treats that befuddle the mind.
How much is in a name, the ducificum or sweet Ficus as the Latin binomial name calls the plant a mystery, conundrum and dare I say miracle. A glycoprotein in the berry called miraculin binds to receptors on our taste buds and causes acidic food to be perceived as sweet.
Traditionally, this biological trick has been used in West Africa where the plant is native to sweeten palm wines and other beverages. There are also several other traditional uses of the fruit such as management for diabetes, postnatal care, and in the treatment of many other ailments. However, it is not clear of the efficacy of the fruit for medicinal purposes. There are some indications that the fruit does contain antioxidants, phenolic acids, glycosides, vitamins, and amino acids that are potentially treatments as antioxidants, anticarcinogenic, and antidiabetics.
Within the field of science, this chemical trickery has been studied to help make food more palatable for chemotherapy patients who have difficulty with the bitter taste of induction side effects from radioactive treatments. The miracle fruit has also been experimented with in creating non-caloric sweeteners as a sugar substitute. Although no such sweeteners have been released to the market, more research and assessment are required.
Playful chefs have also utilized miraculin effects to shift perceptions and flavor profiles of experimental cuisine. Chefs have utilized the fruit to manipulate or “flavor trip” palettes of diners through the course of a meal. Miracle fruit has been used throughout a meal from serving a sloe gin fizz to taste like a lemon drop when preceded by miracle fruit to serving vinegar-based desserts that taste sweet following the consumption of the little red berries.
The berry is also a great tool in understanding taste receptor physiology, and in food psychology. This can help chefs and food scientists utilize wild or tart ingredients that may be underutilized and reduce the use of high sugar recipes, making their menus and product more sustainable.
Although miracle fruit cannot really be classified as a fruit that one would want to eat vast quantities of at one time. It does hold so much interest as a beautiful small plant in your garden or in a pot on your patio and a vast amount of real estate in your brain as it can completely change the way you eat and perceive food. Definitely a great addition to any curious epicurean’s life.
