Sweet Potato Harvest at Hilltop Landings Community Garden

Sweet Potato Harvest at Hilltop Landings Community Garden
After 5 months in the ground, the sweet potatoes at Hilltop Landings Community Garden were finally big enough and ready to harvest. This past week the UF/IFAS Extension Pasco County Community Gardens hosted a Sweet Potato Harvest Party, inviting all the residents of Hilltop Landings to help us clean up the garden, harvest the sweet potato, and replant. The turnout was great, with many new families introduced to the community garden.

In the end, we harvested 80 lbs of sweet potato and everyone got to take many home!
Additionally, FNP Program Assistant Tabitha Villa and FNP Manager Lakisha Crumpler hosted a cooking demonstration and nutrition class after the harvest. They cooked up some of the sweet potato we harvested and showed us a healthy, efficient, and economic sweet potato recipe. Now that’s fresh and truly farm to table. 
