Welcome back to our Food Science and Human Nutrition (FSHN): Day in the Life series! This series is part of our innovative UF/FSHN Careers Advancement Project (CAP), which captures what it’s really like to earn degrees in food science, nutritional sciences, and dietetics. Today’s topic: working as a performance dietitian for the San Diego Padres and a performance nutrition coach for IMG Academy+.
We are pleased to have Hannah Cooper as our guest, sharing a day in her life as a performance dietitian and nutrition coach. In 2020, Hannah graduated from the UF/FSHN department with an M.S. in Food Science and Human Nutrition. Since graduating, she has worked in private practice and as a dietetics relations coordinator before beginning her current positions with the San Diego Padres and IMG Academy+.

Job Title #1: Performance Dietitian for the San Diego Padres
Job Description #1: As a dietitian for the San Diego Padres, my main job is to work with athletes one-on-one to hit their performance goals in and out of season. I started with the Padres as an intern during the 2023 season working with the Arizona Complex League players as well as the 2023 draft class. In the spring of 2024, I shifted into managing our Arizona Complex, Dominican Complex, and three of our four minor league affiliates. This season, I am working directly with our affiliate teams in Lake Elsinore, Fort Wayne, and San Antonio. In addition to working with players on their individual goals, I also develop catering menus for three affiliates, conduct hydration testing weekly for players, teach nutrition and cooking classes, and analyze body composition changes throughout the season for all players.
Job Title #2: Performance Nutrition Coach for IMG Academy+
Job Description #2: A little over two years ago, I started with IMG Academy+, an online extension of the physical academy that allows high school athletes across the world who are working with NCSA to have access to weekly mental and nutrition coaching. I meet with my high school athletes weekly to increase their nutrition knowledge and individual performance.

Supplements and Snacks When I arrive, I like to make my rounds to make sure all the supplement areas are stocked and our snack rack outside the gym is filled with simple carbohydrate snacks. |

Breakfast We have breakfast at the complex every day which is nice–especially with an early day! My go-to breakfast is a breakfast sandwich on sourdough with chicken sausage, eggs, and avocado, along with a side of strawberries and pineapple. |

Player Check-Ins I like to spend time in the training room in the morning catching up with players and making myself visible in case anyone has nutrition questions or needs help with something. Sometimes I’ll help players build their breakfast plates, create supplement routines, or talk about ideas on how they can incorporate more snacks or better choices into their fueling strategy. |

Computer Work: Emails, Notes, Budget and Catering Check-Ins I use this time to catch up on emails and make sure all my catering orders are in place for the day/week. I also frequently make handouts on Canva for travel snacks, grocery shopping, fueling, and supplements. |

Watch Practice I like to get outside and check in on what the Complex League team and the Rehab group are doing. Sometimes I’ll help shag BP or flip to the coaches for infield practice. |

Lunch Lunch is also provided at the field every day. Part of my job is assisting in menu planning for our complex. Thankfully, we have fantastic chefs who have great feel for what the players need before and after practice, so I don’t usually make too many changes or additions to the menus. |

Menu Planning I’m responsible for the meal schedule for three of our four affiliates. Each team has an arrival/BP meal and a post-game for every 6-game series. Developing these meal schedules takes up most of my day, but now that I’m in my second year of working with the Padres, I have go-to restaurants and caterers in every city, which makes menu planning a lot easier! For menus, I focus on lighter meals before the game and slightly heavier meals for post-game. I always make sure there is variety in the proteins, vegetables, starches, and cuisine–I’d like to thank my food service rotation at Shands for helping me develop my menu planning skills. |

Workout Typically, I’ll go downstairs to my apartment gym and follow a Peloton workout or go to a Pilates class down the street if I make it home in time! |

Dinner Most evenings I have meetings with my high school athletes, so dinner is at a different time every night. When the season gets busy, my favorite thing to do for dinner is Mediterranean power bowls with homemade spinach feta turkey meatballs, rice, and pickled vegetables. |

HS Meetings with IMGA+ On any given night I will have between 3-6 sessions with my high school athletes. These range from initial sessions, follow-ups, and even parent sessions. Each session we focus on a different performance nutrition topic to help the athlete’s performance. Many of my athletes have crazy schedules with school and extracurricular activities, so I try to help them find easy, realistic, and smart choices to keep them fueled throughout the day. |
