Celebrating Hispanic Heritage Month with a Delicious & Nutritious Twist!

September 15 – October 15 | Hispanic Heritage Month

Every year from September 15th to October 15th, we celebrate National Hispanic Heritage Month — a time to honor the rich histories, vibrant cultures, and extraordinary contributions of Hispanic and Latino Americans. From art and music to science, literature, and cuisine, Hispanic culture has woven itself beautifully into the fabric of American life. And what better way to celebrate than through food — one of the most powerful expressions of culture and community?

A Brief History: Why September 15th?

What began as a single week in 1968 under President Lyndon B. Johnson eventually grew into something much bigger. By 1988, President Ronald Reagan expanded it to a full 31-day celebration, officially running from September 15th through October 15th. But why September 15th? The answer is rooted in history. On that very date in 1821, five Latin American nations — Costa Rica, El Salvador, Guatemala, Honduras, and Nicaragua — all declared independence. Shortly after, Mexico followed on September 17th and Chile on September 18th. As a result, September 15th was chosen as a powerful tribute to this wave of liberation, resilience, and pride that unites so many Hispanic communities.

A Healthier Take on a Classic Favorite

In the spirit of celebration, we’re highlighting a recipe that honors bold Latin flavors with a nutritious upgrade: Sweet Potato Black Bean Quesadillas. Unlike traditional quesadillas, this version swaps in corn tortillas for more fiber, loads up on sweet potatoes for beta-carotene and potassium, and leans on black beans for plant-based protein. The result? Comfort food that truly loves you back.

Sweet Potato Black Bean Quesadillas

Serves: 8 | Prep Time: 20 min | Cook Time: ~1 hr 15 min

Ingredients

  • 3 medium sweet potatoes
  • 1/2 cup chopped cilantro
  • 3 tablespoons lime juice
  • ¼ teaspoon Kosher salt, divided
  • ½ teaspoon ground cumin
  • Freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 6 ounces baby spinach leaves
  • One 15-oz can no-salt-added black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 16 soft 6″ yellow corn tortillas
  • ½ cup shredded reduced-fat Monterey Jack & Cheddar cheese blend, divided
  • Salsa (optional)
  • Guacamole (optional)

‍ Directions

Step 1 — Roast & Purée the Sweet Potatoes
First, preheat your oven to 400°F. Wrap each sweet potato in foil and bake for about 1 hour, until very soft. Once cool, peel and purée or mash until smooth, then stir in the cilantro, lime juice, ⅛ tsp salt, cumin, and black pepper. Set aside.

Step 2 — Sauté the Filling
Meanwhile, heat 1 tablespoon olive oil in a skillet over medium-high heat. Add garlic and sauté for 30 seconds, then add the spinach and cook until wilted. Next, stir in the black beans, chili powder, remaining salt, and black pepper. Remove from heat and transfer to a bowl.

Step 3 — Assemble & Cook
After wiping the skillet clean and coating it with nonstick cooking spray, place it over medium-low heat. Spread ¼ cup sweet potato mixture on one tortilla, top with 2 tablespoons of the bean-spinach mixture and 1 tablespoon of cheese, then cover with a second tortilla. Cook for 2 minutes per side until the cheese melts and the tortilla crisps. Repeat with remaining tortillas.

Step 4 — Serve & Enjoy!
Finally, serve warm alongside salsa and guacamole if desired.

A Month of Flavor, Culture & Community

Ultimately, Hispanic Heritage Month is a beautiful reminder that culture nourishes us in more ways than one. Whether you’re making this recipe for yourself or sharing it with loved ones, let it be a small but meaningful celebration of the bold, vibrant flavors and rich history that Hispanic culture brings to our tables.

¡Buen provecho! ️

Stay tuned throughout the month for more culturally inspired, health-conscious recipes as we continue celebrating Hispanic Heritage Month!
