Overview of How Electric Pressure Cookers Work

All electric pressures cookers operate in the same way.  Food is placed in an inner pot, a tight fitting lid is closed, preventing steam from escaping,  The liquid in the inner pot is heated and produces  steam.  The steam creates  pressure, which penetrates the food from all sides, cooking food 30% faster than typical stove top cooking methods.  Pressure cooking is a moist heat cooking method, cooking food at higher temperatures and in less time.
